Ok, so I know when you think of delicious vegan food, you might not think of Taco Bell, but it will always have a place in my food-loving heart. Growing up in the 90s, everyone I knew ate fast food, and although our family was perpetually broke, we still found ways to order in. To nine year old me, those drive-thru meals felt like true feasts. It was so exciting to get food from somewhere other than home. Do you remember that feeling? I certainly do.

We all had our favorite places, but I was pretty happy to go anywhere. I loved Schlotzsky's and Taco Bueno, but I never scoffed at my sister's first choice, Taco Bell.

While others ordered fancy, I kept it simple. A bean burrito, no cheese or a crunchy taco, no cheese. I hated pretty much all dairy (except for ice cream) so there wasn't much I could order without annoying the employees. It was kind of a bummer seeing all the menu options and knowing I'd only really be happy with the most basic items.

For this reason, I totally remember when they introduced the Double Decker Taco. I was little, but like, crazy impressed with the marketing geniuses that came up with it. Even back then, I didn't consider that it came from the minds of Taco Bell's chefs. A bean burrito wrapped around a crispy taco?? It was pure marketing, any nine year old could see that.

And I. Was. Here. For it.

The next time we pulled into Taco Bell, I announced that, like Shaq, I would be enjoying a Double Decker Taco. My sister gave no reaction, and my dad said: "absolutely not". He rightfully assumed I would hate it (I was so picky!) and refuse to finish it - leaving him with a hangry little girl demanding a plain burrito only after we got home. My mom, though, was pleased to see me branch out, and she convinced my dad to let me try. 

I ordered two and I ate two with absolute enthusiasm. I knew I would love it, and I finally had a fancy order: a Double Decker Taco, no cheese, mild taco sauce on the side.

I hadn't had one of these in years, but I was feeling very 90s recently and decided to make my own. They are just as good as I recall! Very kitschy and fun like my childhood decade. I may be in my 30s, reasonably healthy, and vegan, but occasionally I gotta do something for that little kid who loved sweating in the Texas heat while eating her fancy Taco Bell tacos and blasting the Now and Then Soundtrack.

DIY Vegan Double Decker Taco
Makes 2 Vegan Double Decker Tacos
Ingredients
  • 1 tablespoon olive oil
  • 1/2 medium sized onion, chopped
  • 12-14 oz vegan ground (I used Gardein)
  • 3 tablespoons all-purpose flour
  • 1 tablespoon taco seasoning
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 cup water
  • salt to taste
  • 2 flour tortillas
  • 2 hard shell tortillas
  • 1/3 - 1/2 cup refried bean (canned or homemade)
  • shredded vegan cheddar (use my recipe if you'd like!)
  • shredded lettuce
  • salsa or taco sauce
Instructions
1. Heat the oil in a large skillet over medium heat. Add the onion, and cook, stirring often, until it softens and just begins to brown. Add the vegan ground, and cook (again stirring often) until the ground is fully cooked and starting to brown, about 5-10 minutes. 

2. While the ground cooks, combine the flour, taco seasoning, onion powder, and garlic powder in a small bowl. When the ground is cooked through, sprinkle the flour mixture over the ground and onions, and use a wooden spoon to completely incorporate the flour and seasonings. The ingredients should start to thicken and look a bit pasty.

3. Add about 3-4 tablespoons of the water to the skillet and quickly stir it into the ground. Once it is absorbed (it should happen quickly), repeat this process until you've incorporated all of the water, or reached the desired consistency. You want to have a wet taco meat situation. From here, add salt to taste and adjust the seasonings if needed.

4.  To assemble your Vegan Double Decker Tacos, start by making sure that your flour tortillas will fit your hard shells. If they're too big, trim them to the correct size. Spread 2-3 tablespoons of refried beans onto the flour tortillas. Then wrap each of those beany flour tortillas around a hard shell tortilla, bean side in. 

5. Fill the inside of the hard shell with a few tablespoons of taco ground, shredded lettuce, and cheese. Drizzle some salsa or taco sauce on top, and serve.
